Step-by-Step Cooking Instructions

1.Prepare the Marinade :Emulsifies oils and acid evenly.

In a bowl, whisk together 2 tbsp balsamic vinegar, 2 tbsp olive oil, 2 minced garlic cloves, 1 tsp dried rosemary, salt, and black pepper.

2.Marinate the Beef :Refrigerate for 2 to 4 hours.

Place steaks in a dish or sealable bag and pour marinade over top, coating all sides. Cover and refrigerate for at least 30 minutes (2 to 4 hours recommended).

3.Preheat & Take Off Chill :Promotes even cooking throughout.

Remove steaks from refrigerator 20 minutes before cooking. Preheat cast-iron skillet over high heat (or preheat outdoor grill/oven to $425^\circ\text{F} / 220^\circ\text{C}$).

4.Sear to Desired Doneness :Sear for 3 to 5 minutes per side depending on cut.

Discard leftover marinade. Place steaks in hot skillet or on grill. Sear 3–5 minutes per side, flipping once, until an internal thermometer reaches your target doneness temperature.

5.Rest & Serve :Locks in juices before slicing.

Transfer steaks to a cutting board and let rest undisturbed for 5 to 10 minutes. Slice against the grain and serve warm.
