How to Freeze Fresh Sweet Corn

Step-by-Step Instructions

1.Shuck & Clean Ears :Removes outer husks and fine silk.

Strip away husks and silk from ears of corn. Rinse under cold water, using a damp paper towel or vegetable brush to sweep away remaining silk threads.

2.Timed Boiling Water Blanch :2 to 3 mins for loose kernels; 4 to 5 mins for whole cobs.

Bring a large stockpot of water to a rolling boil. Lower corn into water and time immediately: boil for 2–3 minutes for loose kernel prep, or 4–5 minutes for whole cobs.

3.Rapid Ice Bath Thermal Shock :Match blanching time exactly (2 to 5 minutes).

Transfer hot corn immediately into a large bowl filled with ice water using tongs. Chill for the exact duration of blanching until cold to the touch, then drain thoroughly.

4.Strip Loose Kernels (If Applicable) :Cut downward using a sharp chef’s knife.

Stand cooled ear upright inside a shallow bowl or over the center hole of a Bundt pan. Slice downward to strip kernels without cutting into the woody cob core.

5.Package, Seal & Flat-Freeze :Lay flat to freeze solid before stacking.

Pack cut kernels or whole cobs tightly into heavy-duty freezer bags. Press out all excess air before sealing. Label with the date, lay flat on a baking sheet to freeze, then stack in the freezer.
