Step-by-Step Cooking Instructions

1.Sauté Aromatic Foundation :Cook 3–4 minutes until soft.

Melt 2 tbsp butter (or bacon drippings) in a heavy Dutch oven over medium heat. Add 1 chopped yellow onion and cook for 3 to 4 minutes until translucent.

2.Wilt Cabbage Bed Uncovered :Sauté uncovered for 5–7 minutes.

Add 6 cups shredded green cabbage and 1 tsp caraway seeds. Sauté uncovered for 5 to 7 minutes, stirring occasionally, to allow volatile sulfur gases to dissipate as the cabbage softens.

3.Deglaze & Simmer Broth :Braise covered for 10 minutes.

Pour in 2 cups broth, scraping up browned bits from the pot bottom. Season with salt and pepper, bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes.

4.Construct Dumpling Dough :Fold wet into dry ingredients gently.

In a bowl, whisk 1 cup flour, 1$\frac{1}{2}$ tsp baking powder, and $\frac{1}{2}$ tsp salt. In a separate cup, beat 1 egg with $\frac{1}{2}$ cup milk and 2 tbsp chopped parsley. Fold wet ingredients into dry using a fork just until combined (do not overmix).

5.Drop Dumpling Clusters :Rest dough directly on top of cabbage.

Remove lid and drop tacky dough by heaping tablespoons onto the hot cabbage bed to form 6 to 8 distinct dumplings. Ensure they rest on top of the cabbage rather than sinking into liquid.

6.Closed Steam Cycle :Do NOT lift the lid for 15 to 18 minutes.

Cover pot tightly with a lid. Simmer on low heat for 15 to 18 minutes without lifting the lid once. Test with a toothpick at 15 minutes; it should come out clean and dry.

7.Garnish & Serve :Serve warm over cabbage.

Remove from heat and serve fluffy dumplings over the caraway-braised cabbage. Pair with seared pork chops, bratwurst, or crusty sourdough bread.
